Temperature has a significant impact on the conversion process between starch and sugar inside potatoes. Experiments have shown that under the condition of 0 ℃, the activity of starch hydrolase inside potatoes increases, which accelerates the hydrolysis of starch into sugar and reduces respiratory intensity. Therefore, the suitable storage temperature for potatoes is 3-10 ℃, and the storage temperature varies depending on the purpose of the potatoes (see Table 1). The relative humidity of the storage environment also affects the storage quality of potatoes. When the air is dry, the water evaporates quickly, causing the potato skin to shrink. When the air is humid, it is easy to sweat, causing a large amount of potato decay. The suitable relative humidity for storage is between 95% and 98%.
